Cheers! to Apple Season!

At this time of year, there are apples involved in all areas of cooking–apple pies, apple danish, apple bread, apples with pork, apple everything!

Well, what about apple cocktails?

Why not?  Apple cider is also readily available, so why not take apple cider up a notch with your fall entertaining?

If you look up apple cocktails, there are oodles to choose from, but I like my cocktails not too fussy.  The best ones are the easiest ones….after all, if you have to reload the pitcher, you don’t want to have to come up with another batch of simple syrup!

Found this one for a great and easy apple cocktail for a group.  Recipe says good for 4-6 servings, but I doubt it in my circle–I’d be inclined to double or even triple this, and make a stack of the apple skewers!

Spiked Apple Cider Cocktail

Ingredients
1/4 gallon apple cider
1/2 cup dark rum
1/2 cup cinnamon schnapps
1 Granny Smith apple, peeled, cut into large chunks
1/2 lemon, juiced

Directions
Mix together the cider, rum, and schnapps in a large pitcher. Add the apples to a small bowl and toss them with the lemon juice. Thread the diced apples onto skewers. Pour the spiked cider into glasses filled with ice, then garnish with an apple skewer and serve.
